wellness | eats and drinks: banana pancakes

Time

Breakfast or snacks–or anytime you feel like you need sweets!

Ingredients

Eggs + banana + coco sugar

1 egg + 1 banana = about 2 pancakes

Whisk the eggs in one bowl, mash the bananas in another bowl. Once done, mix the two, and cook in a non-stick pan.

Sprinkle coco sugar after plating.

Notes

This reminds me of Cafe Breton’s butter and sugar crepe! They’re pretty light, so I can eat 3-4 pieces in one sitting.

Happy snacking!

I’ve been diagnosed with an  autoimmune disease  (MCTD – mixed connective tissue disease, predominantly Polymyositis) and have found to be intolerant to gluten, dairy, and shellfish. The recipes shared here are based on what I can take on the daily and what my functional doctor recommends for me based on my condition and deficiencies.
